Savory Strawberry Salad

May is National Strawberry Month, which means that strawberries are at the peak of seasonality!  Almost every grocery store will have fresh California strawberries on the shelves now and local New York strawberries in June, and they will probably be on sale!  I decided to celebrate by making a delicious Savory Strawberry Salad.  As well as being a sweet treat, strawberries are also highly nutritious.  A serving of 8 strawberries packs more Vitamin C than an orange, and these berries are loaded with antioxidants, potassium, folate, and fiber.  The spinach in this salad also provides a good serving of Vitamin A and iron.  All around, this is a healthy scrumptious salad to serve as a side dish with you next meal or top with grilled chicken and enjoy for lunch!

Makes 4 servings:

Ingredients:

6 oz. bag of spinach or a head of spinach, washed

8-12 strawberries, cut small

handful of walnuts

*Balsamic vinaigrette dressing (recipe below)

goat cheese crumbles (optional)

*Balsamic vinaigrette (Makes 4 servings):

I highly recommend making your own salad dressing.  It’s much healthier than the bottled kind because you know exactly what’s going into it.  And it’s so delicious that I guarantee you will never go back to the bottle.  Give it a try:

¾ cup olive oil

½ cup balsamic vinegar

1 tablespoon Dijon Mustard

2 tablespoon honey

1 garlic clove, minced

salt and pepper to taste

Place all ingredients in a bowl and whisk until the ingredients are no longer separated.

*Reduce the oil to ½ cup or less to cut calories.
